Hazard Analysis and Critical Control Point (HACCP) is an internationally recognised system for effective control of risks in food production. It is accepted worldwide as the standard for warranting food safety and is a legal requirement in many countries. HACCP is implemented at all stages of food production, from procurement to manufacturing and distribution of the final product. The basis of HACCP is built around seven main principles:
  1. Conducting a Hazard Analysis of biological, chemical or physical food hazards
  2. Identifying Critical Control Points
  3. Establishing Critical Limits
  4. Monitoring of Critical Control Points
  5. Establishing Corrective Actions
  6. Establishing verification procedures to confirm that the HACCP system is working effectively
  7. Establishing documentation and record-keeping procedures
HACCP certification denotes to customers the commitment to comply with industry obligations for an effective Food Safety Management System. Awareness of food-borne illness is increasing and concern throughout the industry is driving the use of HACCP and HACCP-based certification programs. These challenges to the food industry have therefore given rise to adopt an effective food safety system.
